A Sneak Peek At The Pan Pacific’s Summer Fresh Menus

Beginning April 22, the Pan Pacific Vancouver will be offering a brand new Summer Menu for guests at the Café Pacifica Restaurant and Cascades Lounge.

Beginning this week, the culinary team, led by Executive Chef Daryle Nagata, will introduce new items including: Seared Ahi Tuna, Linguine with Qualicum Bay Scallops, Herb and Dijon Crusted Lamb Loin, and Oven roasted Kurobuta Pork Chops.

This season’s menu will offer tons of new flavours and fresh ingredients. The plan was to make this season’s menu fresh, light, colourful and of course – tasty!

What’s New

In the past few months, the team has been working hard to bring something exciting to the table and today I got a chance to taste it firsthand. Based on a several requests by locals and tourists, the chefs decided to add more fresh fish and West Coast choices to the menu.

What I enjoyed most was the diversity of the menu and unique flavours from various regions. It wasn’t just a typical menu with the standard choices. Many of the items were original creations and came uniquely prepared.

Some of my personal favourites included:

  • Seared Ahi Tuna – Green papaya salad, mango pineapple salsa
  • Artisan Goat Cheese and Arugula Ravioli – Sauteed wild mushrooms, asparagus tips
  • Herb and Dijon crusted Lamb loin – Sauteed forest mushrooms, creamy mashed potatoes, rosemary thyme jus

 

After lunch, I spoke with Restaurants Manager, Linda Lie who offered her thoughts on the new menus at the Pan Pacific:

“After the great response we received from our 2010 OlympicsMenu, we wanted to try something totally new once again for our guests.

For this spring and summer, we’re offering something flavourful while at the same time letting our chefs use their creativity. For example the Seared Ahi Tuna: The dish is served rare, however each piece is cold smoked for 6 hours and seared hot to bring out the flavors. Likewise, many of our other dishes are uniquely prepared, so I really encourage people to come in for a try!

We also have a specialty chicken curry created by one of our chef’s, Jiju Paul. Chef Paul is originally from Goa and was kind enough to lend us his famous family recipe!  For anyone looking for some authentic Indian flavor, I would definitely recommend this curry!”

Chef Paul’s Curry – Served with lentils, basmati rice, whole wheat chapatti, papadam, pickles, raita. (Choice of Prawn Balchao or Kadai Chicken)

Cafe Pacifica Restaurant

The Cafe Pacifica has established itself as one of the premier restaurants in Vancouver. It was just recently nominated as a Where to Dine Vancouver winner in the category of Italian food.

I find the restaurant offers top quality food from all different parts of the world. Here you can find some of the best Japanese, Italian, Asian and West Coast choices in the city and with a harbor front view (trust me you won’t be disappointed).  You can even enjoy your meal with live entertainment on Friday and Saturday evenings.
